Gotenberg is a FOSS tool for PDF conversion of various file formats.
In my case, I use it alongside Tika to connect to my Paperless-ngx service that I host so it can parse and convert Office documents such as “.doc”, “.xlsx”, and “.odt” as well as emails (“.eml” files).

Refer to Optional Services in the Paperless-ngx documentation for more information.
With the use of these two additional services I find that my Paperless-ngx instance can pretty much handle any document I would ever want to save and also allows me to set up some convenient workflows such as automatically saving any emailed receipts that I tag with a certain label (see Email Consumption).
